“We couldn't get enough of these wonderful Watermelon & Prawn Skewers soaked in an herbed lime marinade, and served over coconut rice!”
12 Skewers Serves 4-6 People
- For Skewers
- 36 Large Prawns (22-24 per pound), tails on, cleaned and deveined
- 1/2 Watermelon
- 1 Serrano pepper
- 1/2 Cup fresh chopped mint
- 1/2 Cup fresh chopped basil
- 3 Tablespoons olive oil
- Pinch kosher salt
- 2 Limes
- 12 (12 inch) skewers
- For Coconut Rice
- 2 Cups Jasmine rice
- 4 Cups water
- 1 Tablespoon butter
- 1 Teaspoon salt
- 1/2 Cup almond slices, toasted
- 1/2 Cup shredded coconut

Step 1 – Marinate Prawns
Combine finely chopped mint, basil, and serrano pepper with olive oil, kosher salt, and juice of 1 lime in a medium sized bowl.
Add clean, dry shrimp, and toss to combine.
Refrigerate for 20-30 minutes
Step 2 – Prepare Skewers
Slice watermelon into 24 triangles, each about two inches high and 1/4 inch thick.
Sprinkle with a pinch salt and drizzle lightly with olive oil.
Assemble skewers with two watermelon triangles, and 3 prawns per skewer (as shown).
Prawns should be at the top and bottom of skewers, with 2 watermelon triangles between 3 prawns.
Lay skewers across a foil lined baking sheet.
When skewers are complete, drizzle lightly with olive oil, the juice of 1 lime, and a pinch more salt.
Step 3 – Grill Prawns and Watermelon
If you're making Coconut Rice, prepare the rice as follows just before you start grilling.
For Coconut Rice
In a medium sized saucepan combine 2 level cups jasmine rice, 4 cups water, 1 tablespoon butter, and pinch of salt.
Bring to a boil over medium high heat. Stir occasionally until mixture begins to boil.
Cover tightly with a lid and reduce heat to simmer.
Simmer for 18 minutes (no peeking!)
When rice is done, add coconut and almonds, and toss gently to combine.
Place skewers on hot grill (400 degrees), turning several times throughout. Total grill time will be 10-15 minutes.
Prawns should be pink, and lightly charred. Watermelon should be softened but slightly firm with grill marks.
Serve Grilled Prawns and Watermelon Skewers over Coconut Rice.
