“It’s fun and easy to make yeast-based bread with this hot cross bun recipe. These buns are light and sweet with cinnamon & clove, and topped with vanilla icing!”

Makes 25 Buns


  • For the Buns
  • 2 Cups milk
  • 1/2 Cup vegetable oil
  • 1/2 Cup sugar
  • 1 Package active dry yeast
  • 5 Cups flour + 1/2 cup
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 Teaspoons salt
  • 1/8 Cup sugar
  • 1 Teaspoon cinnamon
  • 1 Teaspoon cloves
  • 3/4 Cup raisins
  • For the Egg Wash
  • 1 Egg
  • Splash of milk
  • For the Icing
  • 2 Tablespoons butter
  • 1 Cup powdered sugar
  • 1 Teaspoon vanilla
  • 3 Tablespoons milk
  1. Step 1 – Prepare Dough
    1. Combine 2 cups milk, oil, and 1/2 cup sugar in a saucepan. Stir and heat until hot and almost boiling. Turn off the heat and allow mixture to cool – about 30 minutes.
    2. Sprinkle yeast over mixture, and add 5 cups of flour.
    3. Stir to combine and cover with a towel.
    4. Set aside to rise for 1 hour.
  2. Step 2 – Add Raisins and Spices & Form Buns
    1. Combine 1/8 cup sugar with cinnamon and cloves and set aside.
    2. Add 1/2 cup flour, baking powder, baking soda, and salt to dough and stir till combined.
    3. Turn out dough onto lightly floured surface and press to slightly flatten dough.
    4. Sprinkle one third of the sugar/spice mixture and one third of the raisins over dough. Then fold the dough over on itself and flatten again. Repeat the sugar/raisin process three times until all the sugar/spices/raisins are used. (if dough is too tacky, add flour, pressing it into the dough with your finger tips as you fold the dough over itself).
    5. Pinch off golf ball-size pieces of dough. With floured hands, roll each piece into a ball. Then using your finger tips, gently turn the edges under themselves.
    6. Place dough buns on a parchment-lined baking sheet about 2 inches apart.
    7. Cover and allow to rise in a warm place for 30 minutes.
  3. Step 3 – Step 3 – Bake, Cool, Ice & Serve
    1. Preheat oven to 400 degrees.
    2. Make egg wash by mixing 1 egg with a splash of milk.
    3. Just prior to baking, cut a cross on top of each bun using kitchen shears (as shown in photos above). Then brush egg wash gently over each roll. (Alternatively you can shape two strips of dough and place them across each other on top of each dough bun before baking.)
    4. Bake for 20 minutes, or until tops of buns are golden brown. Do not over bake!
    5. Transfer buns immediately to a cooling rack.
    6. When buns are cool, drizzle or pipe icing in a cross pattern over the top of each bun.
    7. Enjoy.
