Prep Time:

1 hour (Includes 30 minutes for marinade)

Serves:

4-6 People

Ingredients:

  • 3 Pounds halibut steak (skinless and boneless)
  • 6 Tablespoons honey
  • 4 Tablespoons Butter
  • 1 Cup milk
  • 1 Cup finely chopped macadamia nuts
  • 1/2 Cup plain breadcrumbs, or Panko (if making gluten-free don't use breadcrumbs)
  • 1/4 Cup sweetened coconut flakes

  • For Coconut Rice
  • 2 Cups jasmine rice
  • 4 Cups water
  • 2 Teaspoons butter
  • 1/4 Cup sweetened coconut flakes

Step 1 – Marinate the Halibut

Drizzle 2 tablespoons of honey directly onto each side of halibut.

Place fish in a ziplock bag with milk.

Allow to marinate in the refrigerator for 30-45 minutes.

Step 2 – Prepare the Macadamia Nut & Coconut Crust

Preheat oven to 375 degrees.

In a shallow pan, toss macadamia nuts, breadcrumbs, and coconut to mix.

Remove halibut from ziplock bag and place directly on top of nut mixture, pressing fish into mixture to adhere.

Press mixture onto top of fish as well, so mixture is used up and is fully coating fish on all sides.

If you’re serving with coconut rice, start the rice now.

Prepare Coconut Rice

Cook rice according to rice cooker instructions, or simply bring rice, water, butter, and coconut to boil in a medium sauce pan.

Cover, reduce heat, and simmer for 18 minutes (no peeking).

After 18 minutes, turn off heat. Fluff with a fork before serving.

Step 3 – Bake and Serve

Place coated fish on a foil lined baking sheet.

Melt butter and remaining 4 tablespoons of butter in microwave.

Pour 1/2 of honey butter mixture over fish.

Place fish on baking sheet and bake in hot oven for 15-20 minutes, depending on halibut thickness.

To test doneness, press your finger onto fish.  If it’s firm, it’s done. Don’t over cook.

Remove from oven and let sit for 5 minutes before serving. Fish will continue to cook outside of oven.

Serve with coconut rice and your favorite green vegetable.

Pour remaining honey butter onto fish and rice once plated.
