Ingredients:

  • For Pork
  • 2 Pounds boneless pork tenderloin, fat trimmed
  • 1 Cup soy sauce
  • 1 Teaspoon sugar
  • 1/4 Cup unsweetened pineapple juice
  • 1 Cup chopped pineapple, plus more for garnish if desired
  • 3 Tablespoons vegetable oil
  • For Sweet Onion Marmalade
  • 1/2 Cup unsalted, butter
  • 5 Large Sweet Onions
  • 1/2 Cup sherry
  • 1 Teaspoon kosher salt
  • 1/2 Teaspoon freshly ground white pepper
  • Optional: Garnish with Chopped Macadamia Nuts

  1. Step 1 – Marinate Pork
    1. Combine ingredients for pork in a ziplock bag, or bowl, and allow to marinate a minimum of 2 hours (ideally overnight). Be sure to completely cover the pork with marinade. Turn the pork during marinade, to ensure all sides are soaked in the juices.
  2. Step 2 – Prepare Sweet Onion Marmalade
    1. Clarify butter by heating it in a small saucepan, or microwave it until it melts. Skim off the milk solids. The remains are "clarified butter," and will allow you to cook the onions at a higher smoke point. Clarified butter is ideal for frying.
    2. Heat the clarified butter in a large saucepan over medium high heat. Add chopped onions and cook until translucent, stirring frequently.
    3. Add sherry, salt and pepper.
    4. Continue cooking for about an hour, until onions are caramelized and soft.
    5. Remove from heat. Onions can be served at room temperature.
  3. Step 3 – Roast Pork and Serve
    1. Preheat oven to 375 degrees.
    2. Remove pork from marinade and place in a lightly oiled, shallow roasting pan. Pour marinade over the top of pork.
    3. Roast pork for 50-60 minutes until golden brown, and thermometer reads 140-145 degrees. (Place thermometer into thickest part of meat to get correct reading).
    4. When done, transfer pork from roasting pan to a cutting board. Let it rest for 10-15 minutes before slicing.
    5. Slice into 1/4 inch thick slices, top with sweet onion marmalade, and garnish with macadamia nuts if desired.
    6. Dish can be served at room temperature.
