  • 2 ¼ Cups all purpose flour
  • ½ Teaspoon salt
  • 1 Teaspoon baking soda
  • ½ Cup granulated sugar
  • ¾ Cup packed brown sugar
  • 1 Cup Butter or margarine
  • 1 Egg
  • 2 Teaspoons vanilla
  • 1 Cup white chocolate pieces
  • 1 Cup salted macadamia nuts, roughly chopped
  • 1/2 Cup dried apricots, roughly chopped
  • Optional: 1/4 Cup crystallized ginger, finely chopped

  1. Step 1 – Mix Butter, Sugars, Egg & Vanilla
    1. Allow butter to soften, then beat until fluffy.
    2. Add sugars, one at a time, and beat continue to beat until fluffy and light.
    3. Add liquid (egg + vanilla), and beat until combined.
  2. Step 2 – Add Dry Ingredients
    1. Combine dry ingredients in a small bowl, then add to butter mixture in thirds, mixing each addition until just incorporated. Be sure to scrape down bowl with each addition.
  3. Step 3 – Bake, Cool, and Enjoy
    1. Scoop 1 tablespoon of batter onto a parchment covered baking sheet. Space batter mounds about 1 1/2 inches apart until baking sheet is full.
    2. Bake each batch in a preheated oven at 350 degrees for 10-12 minutes.
    3. Cookies should not be overcooked, but nicely browned on the outer edges (slight undercooking is better than over cooking).
    4. Allow to sit on baking sheet for 1-2 minutes before moving them to a cooling rack.
