“This beautiful, fresh tart is as fun to make as it is delicious to eat! The crisp crust can be used with other soft cheese and savory toppings – almost like a pizza crust.”

  • For the Tart Crust
  • 11/4 cups all purpose flour
  • 5 Tablespoons cold unsalted butter
  • 1 Teaspoon kosher salt
  • 1/2 Teaspoon white vinegar
  • 3-4 Tablespoons cold water
  • For the Zucchini Top
  • 5 Medium fresh Zucchini, sliced into 1/8th inch thick rounds
  • 2 Teaspoons kosher salt
  • 2 Tablespoons extra-virgin olive oil
  • Freshly ground pepper to taste
  • 1/4 teaspoon crushed red pepper flakes (if desired)
  • For the Goat Cheese Mixture
  • 8 oz. Softened Goat Cheese Chevre (near room temperature)
  • 1 Tablespoon fresh, finely chopped Thyme
  • 1 Tablespoon fresh lemon zest
  • Pepper to taste
  1. Step 1 – Make the Tart Crust
    1. Drizzle olive oil, balsamic vinegar and pinch each of salt, pepper and red pepper flakes on your serving dish
  2. Step 2 – Prepare the Zucchini and Goat Cheese Mixture
    1. Layer one each mozzarella ball, basil leaf and tomato on each toothpick
    2. Lay each Caprese Stick on prepared dish, working from the middle of the plate out
  3. Step 3 – Roll the Dough, Layer Toppings and Bake
    1. Drizzle olive oil and balsamic on top of caprese sticks
    2. Sprinkle to taste with salt, pepper, red pepper flakes and Italian seasoning
    3. Serve and enjoy!
